Recipe: Indian-Style Matcha

Ok, hear me out: a little bit of matcha, a little bit of jaggery, a little bit of imagination, and a whole of ghee. I first discovered this recipe when I was at a friend’s place – without my trusted various nut milks and honey – and still wanted my morning cup of matcha. I had a feeling that the ghee would work well with the water to make a creamy base, and jaggery was the obvious sweet pairing to keep with the flavour profile. All I can say is don’t knock it ‘til you try it!

Here’s what you’ll need:

-       1 serving matcha (I like DoMatcha)

-       1 tbsp ghee (I like Brar’s)

-       1/3-1/2 cup water

-       1 tsp jaggery (sub brown sugar)

-       Matcha whisk

Method:

01.     Heat water over medium-high heat on stove.

02.     Once hot (not boiling), add in ghee and jaggery, and stir until combined.

03.     Add in matcha and whisk vigorously until smooth.

04.     Serve, sip and enjoy!

Some notes:

-       You might have to try a few different ghee brands before finding one you really like (I like Brar’s or ghee straight from India).

-       You can expect that same bright green hue but the overall drink will be more translucent since we’re not using a thicker milk.

-       If you notice a thin layer of ghee rising to the surface, give it a good stir to re-combine.

-       You won’t see much froth when whisking the matcha like usual – focus on dissolving all the clumps and you’re good to go!
