Recipe: Masala Hummus

JUNE 2024

A lot of things come to mind when I think of summer: farmers’ markets, bright florals, fun jewelry, linen pants, lying in the grass, sun on my face and, of course, gorgeous dinner parties with imaginative tablespaces and exceptional plating. In my personal experience, no dinner party is complete without a good dip. You know, something to serve as a starter with crudités, on the side with sourdough or as an elevating part of a main. Enter: my masala hummus aka a spicy twist on a beloved classic.

Here’s what you’ll need:

-       1 can (540 mL) chickpeas

-       1/3 cup extra virgin olive oil

-       2 tbsp aquafaba

-       2-3 tbsp runny tahini (I like Tamam – I’ve tried a lot of brands…)

-       Spice mix (below)

-       Optional: water to thin as desired

Spice Mix

-       ½ tsp garam masala

-       ¼ tsp cumin powder

-       ¼ tsp turmeric powder

-       ¼ tsp fennel seeds

-       ¼ tsp chili powder

-       S&P to preference

Method:

01.     Blend chickpeas, aquafaba and olive oil.

02.     Once mostly combined, add tahini.

03.     Once smooth, add spice mix.

04.     If desired, add water slowly, one tbsp at a time.

05.     Plate, serve and enjoy!
